It is produced from N690 BÖHLER steel, a stainless cobalt steel which is then vacuum tempered. The hardness level has been brought up to 60HRC making this blade a remarkable cutting tool.
The peculiar blade shape allows to cut food while only touching the dish with the blade-tip.
If correctly used, this knife will retain its original edge for a very long time.
